Aloor Dum Bengali Favorite Dish Very Tasty To Eat

Aloor Dum

Ingredient:
  • Cardamoms 5 nos.
  • Cinnamon 2 stick.
  • Cloves 6 nos.
  • Cumin seeds  1 tsp.
  • Fresh coriander leavesto taste.
  • Garam masala  1/2 tsp.
  • Ginger paste 30 grams.
  • Green chillies- slit  5 nos.
  • Lemon juice to taste.
  • Oil to fry.
  • Onion paste 125 grams.
  • Potatoes 500 grams.
  • Red chili powder 1.5tsp.
  • Salt to taste.
  • Sugar  1/2 tsp.
  • Turmeric 1.5tsp.
  • Yoghurt  50 grams.

Method:
  • Peel the potatoes and leave in salty water for approx. 1/2 an hour.
  • Heat oil in a pan and fry till they become a slight golden brown and firm and keep aside.
  • Take oil in a kadhai and put in the cloves till they splutter.
  • Add the cinnamon and cardamom.
  • Add in the onion paste. Stir for about 5-6 minutes till the oil separates.
  • Add the ginger paste and stir for a few more minutes.
  • Add the red chilli powder and turmeric powder. 
  • Roast the cumin seeds in a dry pan and grind them to a powder.
  • Add sugar and the roasted cumin powder and stir for 2 minutes.
  • Beat the yoghurt and add it to the kadahi.
  • Lower the temperature and put in the fried potatoes and simmer.
  • Cook the potatoes covered till they turn tender; do not let the steam escape.
  • Add the garam masala powder and cover again.
  • Remove from heat. Garnish with green chillies and coriander leaves.
  • Serve hot with rice, roti or paratha.

Appam Kerala's Favorite Very Very Sweet Breakfast Dish

Appam

Ingredients:
  • 2 cups raw rice.
  • 1/2 cup cooked rice.
  • 2 cups coconut milk.
  • 2 tsp sugar.
  • Salt to taste.
  • 1/2 tsp yeast.
  • Coconut oil or any other refined oil.
  • For greasing and cooking.
  • Vegetable korma for serving.
Method:
  • Wash and soak the rice for 2 to 3 hours. Drain.
  • Combine the soaked rice, cooked rice and ½ cup of coconut milk and blend in a mixer till smooth.
  • Add the sugar, remaining 1½ cups of coconut milk and salt and mix well.
  • Add a little lukewarm water to the yeast and mix well.
  • Add it to the rice mixture and mix well (the batter should be of dropping consistency). Cover and keep aside for 2 to 3 hours.
  • Heat an appam kadhai or a deep non-stick tava and grease it lightly with oil.
  • Pour a ladleful of the batter into it and slowly rotate the kadhai in a circular motion so that a thin layer forms on the side while the middle remains thick. 
  • Cover and cook for a minute, remove the appam when the middle fluffy part is cooked. 
  • Repeat for the remaining batter to make to make more appams.
  • Serve hot with vegetable korma.

South Indian Vegetable Biryani Very Yummy To Eat

South Indian Vegetable Biryani :

Ingredient 

  • Almonds 15 grams.
  • Biryani masala 1pkt.
  • Carrots 100 grams.
  • Cashew nuts 15 grams.
  • Cauliflower 100 grams.
  • Curds 200 grams.
  • Fried onions 40 grams.
  • Ginger garlic paste 1 tbsp.
  • Green chilli sliced 3 nos.
  • Kala jeera 1 tsp.
  • Mint 40 grams.
  • Oil 100 ml.
  • Paneer 50 grams.
  • Potatoes 100 grams.
  • Rice 300 grams.
  • Salt  to taste.
  • Garam masala 1 tsp.
 How to make :
  • Take a pan add oil,garam masala,saute it add zeera,ginger- garlic paste.
  •  Cut  vegetables little bit long size mix well and add salt.
  • Cook till they are half cooked.
  • Add mint,coriander,green chillies,biryani masala, paneer  and mix half cup of curd.
  • Soak rice for 1hr. in abowl.
  • Boil water and add rice,the rice to be cooked half (70%) and strain the rice.
  • Take a biryani bowl add half of the cooked vegetables spread all over the pan add some curd,nuts,salt,fry onions and half strain rice.
  • Lastly add fried onions,bread,close it with a lid,and cook it for 5min in avery slow flame.
