Strawberry  Cupcakes

Ingredients:
  • All purpose Flour 1 3/4 cup 
  • Baking Soda  1 tsp 
  • Sugar  1 cup 
  • Walnuts 1/2 cup   (chopped)
  • Egg  2 x  Whites
  • Vanilla Extract  1/2 tsp 
  • Vegetable Oil  1/2 cup 
  • Frozen sweet Strawberries  10 oz pkg 

Method Of Making:
  • In a bowl combine flour, baking soda, sugar and walnuts together.
  • Beat together egg whites, vanilla and oil in another bowl till well mixed.
  • Combine strawberries.
  • Beat in a mixer at slow speed till strawberries are broken somewhat.
  • Add flour mixture.
  • Mix slowly till smooth but pieces of strawberries are still visible.
  • Pour batter into greased muffin tins, filling to half.
  • Bake at 350 degrees F till they are done, it will take about 30 minutes.

Tomato Onion Raita Very Tasty Indian Dish

Tomato Onion Raita

Serves: 2 - 3 people

Ingredients:
  • Plain curd / dahi 2 cups  
  • Tomatoes and onions 1 cup  (finely chopped)
  • Ginger (grated) 1 tsp
  • Coriander leaves 1/2 tsp  (finely chopped)
  • Salt to taste
  • Pinch of sugar
  • Oil 2 tsp
  • Split black gram 1/2 tsp
  • Cumin seed, mustard seed 1/4 tsp
  • Chili 1  (finely chopped)
  • Curry leaves 2-3

Method Of Preparation:
  • Mix the tomatoes, onion and ginger.
  • Add some salt and sugar to it and mix it well.
  • Heat oil in frying pan
  • Add curry leaves to it after that add split black gram fry it for few minute. 
  • As the dal turns brown add cumin seed and mustard seeds. 
  • When they start to pop add the green chili and fry for few seconds.
  • Pour the above seasoning over tomato and onion mixture.
  • Add the yogurt and mix it well.
Serve it with roti or rice.

Mixed Fruit Raita Favorite Indian Dish Yummy To Eat

Mixed Fruit Raita 

Ingredients:
  • Curd (yogurt) 2 cups 
  • Bananas 3nos
  • Pineapple  1 small  
  • Apples 2nos
  • Ripe Mango 1no
  • Pomegranate seeds  1 cup 
  • Chopped coriander leaves
  • Sugar to taste
  • Salt to taste
  • Black pepper powder to taste

Method Of Making:
  • Whisk the curd with hand mixer (Mathni) properly and mix salt, sugar, and curd is thick
  • Add little milk or water.
  • Cut all fruits in small cubes and add to the curd.
  • Garnish mixed fruit raita with chopped coriander and pomegranate.
  • Serve with rice.
